Egg Curry!!

Egg Curry


1.Sesame Oil —-> 3-4 tbsp.
2.Mustard —-> 1 tsp.
3.Fenugreek —-> 1/4 tsp.
4.Curry leaves —-> As required.
5.Green chilly —-> 1 medium size.
6.Small onion —-> 10 nos.(3 for roasting and 7 for grinding)
7.Tomato —-> 1 medium size
8.Chilly powder —-> 1 1/4 tbsp
9.Coriander powder -> 2 tbsp
10.Turmeric powder -> 1/4 tsp
11.Salt —-> As required
12.Tamarind —-> 1 small lemon-size
13.Cumin seeds —-> 1/2 tbsp
14.Egg —-> 4 nos.
15.Coconut —-> 5 tbsp grated

i)Take a pan and add sesame oil.
ii)Add mustard, fenu greek ,curry leaves,green chilly and small onion .
iii)Roast the above ingredients well.
iv)Add Tomato,chilly powder,coriander powder ,turmeric powder and salt.
v)Roast it for sometimes(around 5 mins).
vi)Add the water-soaked Tamarind (small lemon-sized) and allow it to boil for sometimes.


Mean While…

i)Grind coconut,small onion and cumin seeds.


i)Add the grind ed mixture from step 2 with the boiled mixture from step 1.
ii)Allow it boil until the oil gets separated.



i)Break the eggs into the curry in step 3.
ii)Sprinkle few drops of water over the broken eggs so that it wont break .
iii)Turn the eggs after 5-7 minutes.
iv)Cook it for 5 more minutes.

Tasty egg kolumbu ready for your healthy Vendayam Idly.
