Carrot Rice – It is Carrot all the way!

Carrot Rice

Ingredients :

 1. Boiled Rice: 1 cup (or as per no. of servings)

 2. Urid Dhal: 2 tbsp

3. Red Chilly: 3-4

4. Grated Coconut: 3-4 tbsp

5. Cinnamon: 1 small

6. Cardamom: 2-3

7. Bay Leaf: 1 leaf

8. Onion Big: 1 No.

9. Curry Leaves; 3-4

10. Carrot: 250 gms

11. Turmeric Powder: 1/2 tsp

12. Salt: As required

13 Corriander Leaves: As required

14. Asafoetida Powder: As required

Step 1:

Take 1 cup of rice(Boiled Rice) and boil it.

Step 2:

Take a frying pan, add 2 tsp oil, 2 tbsp urad dhaal, 3-4 red chilli and  3-4 tbsp of grated coconut. Roast it well. Once the mixture cools down, grind it well till it becomes fine powder and keep it aside.

Note: no water to be added.

Step 3:

 Take a frying pan, add 2 tbsp of ghee, add 1 small piece of cinnamon, 2 cardamoms, 1 Bay leaf, 5-6 cashew nut.


Fry the mixture till Cashew becomes golden brown. After that, add 2 green chillies to it. Add chopped onion (Big) to it and also curry leaves. Roast it well & add grated carrot, 1/2 tsp turmeric powder, salt and pinch of Asafoetida. Fry it till Carrot cooks well.


Step 4 : 

Add the fine powder that was kept aside to the above mixture and roast well.

Step 5:

Once the above steps are completed, add the mixture to the boiled rice. Add coriander leaves and a bit of salt (if required). Mix well.
